Founded on the Gold Coast in 2005, Zushi Sushi first opened in the very busy Pacific Fair, Broadbeach. With over 19 million visitors to the shopping Centre each year it was the perfect place for the Zushi Sushi model to be put through it's paces and be truly tested. Originally opening as Marcia's Sushi when the western wing of the Centre was built the Sushi Train concept proved very successful with visitors to both the shops and the Theatre complex above.

The novelty of the Sushi Train, combined with the 'healthy choice' that Sushi offers over other food outlets, meant that the restaurant quickly developed a reputation and became a popular choice with the locals as well as the Interstate and International visitors. When Glen McDonald purchased the business in 2005, it was well in need of a refurbishment. A re-branding was also in order and hence Zushi Sushi was born.

Zushi, meaning 'large sushi roll' (also a city located in Kawagawa, Japan) was chosen as the name. Even at the early stage, Glen was planning a large chain of Sushi Train style restaurants in locations through-out Australia.

"Sushi is a food that is best served fresh. By fresh I don't only mean made that day. I mean that it is made within hours of consumption. With this in mind, the restaurant model was chosen over the 'Kiosk' format where the Sushi is made in a factory, shipped out in the morning and sold through-out the day"

Glen McDonald, the owner, was raised in Brisbane, South East Queensland. In the late 1980's he followed many of his peers into a Trade. Glen chose to become a Cabinet Maker, and after completing his apprenticeship, rose to become well known in the industry, before being recruited by one of the States largest manufactures. Here he managed 60 staff in the factory until 'self employment' beckoned and Glen purchased a Food and Beverage Outlet on the Gold Coast.

This was where Glen truly began to excel at business. Recognising a niche in the local business community, he grew a very successful delivery service allowing im to step back from the businesses 'coal face' and explore new opportunities. Upon purchasing the Sushi Train, Glen quickly adopted his already successful Local Area Marketing campaign and grew the new business until, within a few short months, it was out performing the previous business owners figures. In 2006, Glen begun looking at models for expanding the Zushi Sushi chain.

2007 saw the opening of the second Sushi Train at Harbour Town Shopping Centre and the development of 'hub' principle, allowing for distribution to Kiosk and Wholesale customers in the area. In 2008 these developments have begun to materialise and new Kiosks and a concept Saki Bar & Restaurant are in the pipeline.
